Uff da in a Jar
This recipe was featured in our 1999 newsletter.
We Minnesotans aren't known for our daring tastes. We're fond of saying, "It's not the heat, it's the jalapeños." We like to think our northern salsa is comfortably bold, but you can adjust the intensity to your liking.

| Amount | Measure | Ingredient |

| 18 | tomatoes, diced | |
| 1 | large green pepper | |
| 2 | large onions, diced | |
| 1 | 6-oz. can | tomato paste |
| 1/3 cup | cider vinegar | |
| 2 | cloves | garlic, minced |
| 1 | Tablespoon | sugar |
| 1-1/2 | teaspoons | salt |
| 1 | 4-oz. can | diced hot jalapeños
(more or less to taste) |
Combine all ingredients in a large pot. Simmer 30-60 minutes
or until desired thickness. Can be canned or frozen.
Jars in refrigerator last 3-4 months.
